Paolo Vodopivec farms six hectares of vineyards: he is devoted to one grape and produces one wine only, Vitovska. His fields are framed by the rocky Carso, located just above Trieste. Farmed organically and the wine they give rise to is produced without fining or filtration.
The wine itself has flavours of apricot and dried fruits, evolving into darker plums and figs. Its tannins are fine, with citrus undertones and a distinct taste of minerals.
